Aurélien Poirot - Chef de Cuisine

It has been years since Aurélien Poirot first was introduced to the secrets of great cooking by chef (crowned with 2 Michelin stars) Alain Dutournier at the Parisian restaurant Le Carré des Feuillants** and at Il Cortile* with Alain Ducasse as chef. After several stints as sous chef, Poirot chooses his last Parisian culinary home to be the institute Le Meurice on the famous Rue de Rivoli. As the number one sous chef in this restaurant Aurélien truly learns about luxury in the hotel business. Looking for a challenge abroad Poirot leaves for Brussels. In cooperation with the famous 3star chef Alain Senderens our masterchef opens the restaurant Spud's on the Place Jourdan. Since October 2008 Aurélien Poirot is the dedicated chef of the Sofitel Amsterdam The Grand and his domain is the brand new kitchen of Bridges.


 

Jos van Hunen - Restaurant Manager

Bridges is the leading fish restaurant in Amsterdam where culinary innovation is pleasantly mixed with classic French gastronomy. At Jos' the guests enjoy a highly rated service level in a very relaxed and accessible atmosphere of utter luxury. His 'black brigade' displays great affinity with the products which makes for great enthusiasm when serving the dishes. Jos van Hunen expects that Bridges will become a well-loved haven for many Amsterdamians, culinary connoisseurs and international VIP's who regularly stay at the hotel. Bridges becomes a home away from home.



 

 

Hans Tuin - Sommelier

The Bridges Vinothèque is the domain of sommelier Hans Tuin. From here he serves specially composed wine arrangements and vintage champagnes, straight out of the phenomenal wine cellar he lovingly maintains. A good selection of wines can also be ordered per glass. Hans is a regular in chef Aurélien Poirot's kitchen. Together they brainstorm over the perfect wine and dish combinations. Hans Tuin: "The menu of Bridges offers a lot of fish and other local specialties. Because of that, you'll find a lot of white wine on the menu. We also carry a fine selection of red wines, of course."
