Grand Opening Bridges 23rd of November 2009
A new fish restaurant builds bridges between Amsterdam and culinary history
The new restaurant Bridges, a part of the hotel Sofitel Amsterdam The Grand, was officially and stylishly opened on Monday the 23rd of November. At Bridges it’s all about fish (Fins) and wine (Vins). Last night the first catch arrived per boat, was unloaded by the French chef Aurélien Poirot and his white brigade and was then taken into the kitchen of Bridges. Mayor Job Cohen and Robert-Jan Woltering, General Manager of The Grand cut the symbolical fishnet/ribbon and declared the new restaurant to be open. About 300 guests attended the opening ceremony. Among those were Jan des Bouvrie, Joop Braakhekke, Sander Kleinenberg, Cor van Zadelhoff and Cees Dam. The guests could festively take in the restaurant, the Cocktail Bar, the Raw Bar, the Vinothèque and the completely restyled courtyard.
For the occasion all the guests had their picture taken in front of the mural ‘Questioning Children’, 1949 by COBRA-artist Karel Appel. The lines and colors in that very same mural inspired the French interior architect Sybille de Margerie for the design of the restaurant. Open planned, accessible, modern and homely at the same time.
Building culinary bridges
During his opening speech mayor Cohen proudly told the guests that the location which, up until 1987, was used as the canteen to the former city hall, now is to carry the name Bridges.
And Bridges is synonymous to a place of culinary enjoyment. Robert-Jan Woltering added to this that the kitchen of the restaurant was to build ‘Bridges’ between the French and the Dutch culinary traditions: fish from Holland, cooked with a French twist. Sommelier Hans Tuin serves complementing wines from an innovating wine list and restaurant manager Jos van Hunen, together with his team, is in charge of an excellent service.

In the lively Bridges Lounge we serve our ‘Grand’ daily from 15.00h until 17.30h. Homemade pastries, scones and sandwiches starting at €30 pp.
You are festively welcomed with an excellent glass of champagne from the house of Gosset. Enjoy all kinds of delicacies like the traditional hot scones straight out of our own bakery and served with three kinds of jam and - as it should be – with real clotted cream from Devonshire. Of course there are also sandwiches, dressed with smoked (oak) salmon and horseradish-cream cheese, egg salad with spring onions and fresh chives, soft cooked kitchen, coriander and pineapple. There are also lovely sandwiches with shrimps from Holland and a cocktail dressing with a crème fraîche base. Get acquainted with delightful tea from every exotic region. Towards the end of this traditional several small desserts are served; a spoon of ‘crème brûlée’, homemade bonbons, tartlets with fresh fruit and a trio of mocha, caramel and chocolate. After this, dinner can wait for the time being…

Op vrijdag 6 en zaterdag 7 november 2009 bieden wij u de kans aanwezig te zijn bij de misschien wel meest unieke gastronomische ervaring van uw leven. Voor de derde keer vindt dan het culinaire top-evenement Stars, Food & Art plaats in het aangrenzende hotel Sofitel Amsterdam The Grand. The Grand Carousel of Senses | 7 november 2009
Als onderdeel van Stars, Food & Art kunt u op zaterdag 7 november van 12.00 tot 14.00 uur ook genieten van ‘The Grand Carousel of Senses’. U wordt bij deze interactieve beleving verrast met vijf verschillende moods die laten zien dat gastronomie en emotie onlosmakelijk met elkaar zijn verbonden: stoer, extravagant, sereen, nostalgisch en sensueel. Jonnie en Thérèse Boer, restaurant De Librije*** in Zwolle, creëren op harmonieuze wijze de diverse moods door combinaties van spijs en wijn. DJ Steef, bekend van Woodstock69 in Bloemendaal, Dr. Perfume en kleinkunst actrice Eva van Manen maken met hun kunsten de moodervaring af. De presentatie van ‘The Grand Carousel of Senses’ is in handen van Astrid Joosten.
Tijdens ‘The Grand Carousel of Senses’ kunt u ook alle twaalf deelnemende sterrenchefkoks van Stars, Food & Art ontmoeten. Zij delen graag hun visie op de vijf verschillende moods met u.
